Layered Strawberry Squares |

Took this recipe from an old Joys of Gelatin book. A nice refreshing summer dessert. Ingredients:
2 (3 ounce) packages strawberry gelatin |
2 cups boiling water |
1 cup cold water |
1 pint fresh strawberries |
2 tablespoons sugar (optional) |
1 (8 ounce) container bib-dairy whipped topping, thawed |
18 graham crackers |
Directions:
1. Dissolve gelatin in boiling water. 2. Add cold water and chill until slightly thickened. 3. Meanwhile, slice strawberries, reserving a few for garnish and sprinkle with sugar. 4. Fold whipped topping into gelatin, blending well. 5. Fold in strawberries. 6. Place 9 graham crackers in bottom of 9-inch square pan. 7. Spread half the gelatin mixture over crackers. 8. Repeat layers. 9. Chill until firm, approximately 3 hours. 10. Cut into squares. 11. Garnish with reserved strawberries. |
