Layered Spinach Tortellini Salad |

This is a delicious recipe I received from a friend. A beautiful salad that is simple to make. Crunchy cabbage and spinach mix with soft tortellini and creamy ranch dressing. Cook time is chill time. Ingredients:
1 (19 ounce) or 2 (9 ounce) package refrigerated cheese tortellini |
2 cups shredded red cabbage |
6 cups torn fresh spinach |
2 cups cherry tomatoes, halved |
1/2 cup sliced green onions |
1 (8 ounce) bottle ranch salad dressing |
8 bacon strips, cooked and crumbled, optional (although bacon is far from optional in my world, hahaha!) |
Directions:
1. Cook tortellini according to package directions. Drain and rinse with cold water; set aside. 2. In a large glass bowl (I suggest a trifle bowl or any clear glass bowl with straight sides), layer cabbage, spinach, tortellini, tomatoes and onions. 3. Pour dressing over top; sprinkle with bacon if desired. Cover and refrigerate for at least one hour. |
