This came from the 1993 edition of Best Recipes from the backs of Boxes, Bottles, Cans and Jars . Quoting: One of the first of the no-time-to-cook recipes from Bisquik. I compare it to the Zucchini Appetizer that is so popular; they are both good. I'm guessing on the time to make it and bake it.
Ingredients:
1 cup bisquick baking mix
1/4 cup milk
2 eggs, slightly beaten
1/4 cup onion, finely chopped
10 ounces spinach (frozen, chopped, thawed and drained)
1/2 cup parmesan cheese, grated
4 ounces monterey jack cheese, cut into 1/2 inch cubes (i shred instead)
12 ounces cottage cheese
1/2 teaspoon salt
2 garlic cloves, minced
2 eggs, slightly beaten
Directions:
1. Preheat oven to 350 degrees. Spray a rectangular baking dish 12 x 7 1/2 x 2 inches with cooking spray. Mix Bisquick, milk, 2 eggs and the onion and beat vigorously for 20 strokes. Spread in the dish. Mix remaining ingredients and spoon evenly over batter in dish. Bake until set, about 30 minutes. Let stand 5 minutes before cutting.
