Fabulous Mexican appetizer for a crowd, but very easy to scale down for a smaller crowd. I do a quarter of a recipe to feed a small football party or in half for a slightly larger crowd. There's seldom any left anyway. Ingredients:
2 cans dips, black bean dip, jalapeno style |
1 cup low-fat sour cream |
2/3 cup mayonnaise |
1 envelope taco seasoning mix |
2 4 ounce cans green chiles, chopped, drained |
2 containers prepared guacamole |
2 cups cheddar cheese, shredded |
2 cups green onions, sliced |
2 cups red ripe tomatoes, chopped |
1 16 ounce can ripe olives, sliced |
1 cup jalapeno peppers, pickled, sliced |
Directions:
1. On large , deep platter (or whatever), thinly spread bean dip. In small bowl, combine sour cream, may & taco seasoning mix; spread over bean dip. Sprinkle with chiles. 2. Spread guac over chilies. Sprinkle with cheese, onions, tomatoes & olives. Last scatter sliced jalapenos over. Serve with tortilla chips. |
