                    Not the typical potato salad. Everyone loves this. And it can be made the night before! Ingredients: 
                    
                        
                                                8 medium baking potatoes  |  
                                                2 1/2 cups mayonnaise  |  
                                                2 cups sour cream  |  
                                                1 teaspoon (or more) prepared horseradish  |  
                                                1 teaspoon celery seed  |  
                                                1/2 teaspoon salt  |  
                                                1 medium sweet onion, finely chopped  |  
                                                1/2 cup flat-leaf parsley, chopped  |  
                                                
                     
                    Directions: 
                    
                        
                            
                                1. Cook potatoes in boiling salted water just until fork tender. 2. Drain and cool. 3. Peel and slice potatoes 1/8 inch thick. 4. In bowl, combine mayonnaise, sour cream, horseradish, celery seed and salt. 5. In second bowl, combine onion and parsley. 6. In large serving bowl, arrange a single layer of potato slices. Cover with a layer of mayonnaise mixture and sprinkle with some onion mixture. 7. Continue layering ending with parsley and onion mixture. 8. Do not stir. 9. Cover and chill 8 hours or overnight.                              |
