Layered Penne With Ham Mushrooms And Peas |

I love the combination of ham mushrooms and peas with pasta. This is an easy layered dish. Ingredients:
1/4 cup of butter |
1 cup of sliced fresh mushrooms |
3 tbsp of red bell pepper, chopped |
3 tbsp of green onion |
2 tbsp of flour |
1/2 tsp of white pepper |
1 tsp of dijon mustard |
1 cup milk |
1 cup chicken broth |
2 cups diced cooked ham |
1 cup of small peas defrosted |
6 ounces of penne cooked and drained |
1 cup of ricotta |
1 cup shredded swiss cheese |
1/4 cup of grated parmesan |
Directions:
1. Melt butter in sauce pan. 2. Add mushrooms, red pepper and onions; cook unti tender. 3. Remove from heat. 4. Stir in flour and pepper, blend til smooth. 5. Add mustard. 6. Gradually add milk and broth. 7. Heat to boil and boil one minute whisking all the while. 8. Remove from heat. 9. Stir in ham and peas. 10. Place one cup of sauce on bottom of 9 inch square pan. 11. Layer half the penne over sauce. 12. Spread with 1/2 of ricotta, half remaining sauce, half the swiss and half the parmesan cheese. 13. Repeat penne, ricotta and sauce. 14. Cover with foil and bake 375 for 30 minutes. 15. Uncover and bake 10 minutes more. 16. Sprinkle with remaining swiss and parmesan cheese. 17. Let stand ten minutes before serving. 18. The residual heat will melt the other cheese. 19. Serves six. |
