Layered Mexican Casserole |

Family loves Tex-Mex, easy casserole to throw together. I have made this with taco seasoned ground beef and/or diced chicken. To go meatless occasionally, I make it this way. Ingredients:
1 can ranch style bean |
1 package spanish rice, cooked |
6 flour tortillas or 6 corn tortillas or 6 whole wheat tortillas, torn |
1 (8 ounce) container sour cream |
1 can rotel tomatoes |
1 -2 cup cheddar cheese |
Directions:
1. Preheat oven to 350. 2. Grease 13x9 casserole dish. 3. Tear tortillas into small squares. 4. Arrange at the bottom of dish, to form layer. 5. Pour can of beans on top, add cooked rice to top of beans, another layer of torn tortillas. 6. Mix sour cream and rotel together. 7. Pour on top of torn tortillas, top with desired amount of cheese. 8. Bake for 45 minutes covered. |
