If you love lemon meringue pie, then you will go crazy for this light and lemony dessert. Great with a hot cup of tea. Makes a nice presentation at a party table.
Ingredients:
first layer
2 c. all purpose flour
1 c. butter
1 c finely chopped pecans
second layer
2-8 oz. cream cheese, softened
1 c icing sugar
1 c whipped cream (or cool whip)
third layer
2 pkgs. lemon pudding and pie filling (enough for 2 pies)
fourth layer
2 c whipping cream
2 t sugar
1 tsp. vanilla
chopped pecans or slivered almonds for garnish
Directions:
1. First Layer:
2. Mix flour, butter and nuts together until crumbly. Press into 9x13 pan. Bake 350 oven for 15 minutes.
3. Second Layer:
4. Beat cheese and icing sugar together well. Beat whipping cream until stiff. Fold into cream cheese mixture. Spread over cooled crust.
5. Third layer:
6. Prepare lemon pie fillings according to directions on package. Cook, stirring often. Pour over cheese layer.
7. Fourth Layer:
8. Beat cream, sugar and vanilla until stiff. Spread over lemon layer. Garnish with chopped pecans or slivered almonds.
