I am always looking for new recipes to use up my excess garden produce. I came up w/ this to use up eggplant and tomatoes.
Ingredients:
-eggplant slices, salted and dried, breaded, and fried.
-ground beef, cooked.
-sauce, homemade or jar.
-mirepoix, cooked w/ beef.
-ricotta cheese.
-mozz.
-parm/regg.
Directions:
1. -LAYER THE FRIED EGGPLANT SLICES W/ THE BEEF.
2. -SPREAD ON SOME RICOTTA.
3. -SPREAD A LITTLE SAUCE.
4. -PUT ON SOME MOZZ.
5. -SPREAD ON A LITTLE MORE SAUCE.
6. -SPRINKLE ON SOME PARM/REGG.
7. -REPEAT.
8. BAKE TILL HEATED THROUGH.
