This is my mother in law's recipe. She calls it Aunt Ruby's Delight . However, since I've never met Aunt Ruby and that wouldn't mean anything to someone not in the family I renamed it. Ingredients:
1 1/2 cups flour |
3/4 cup butter |
1/2 cup chopped nuts, we've always used walnuts |
8 ounces cream cheese |
1 cup powdered sugar |
8 ounces cool whip |
3 (4 ounce) boxes instant chocolate pudding mix |
8 ounces cool whip |
1/2 cup chocolate shavings |
Directions:
1. For the crust:. 2. Cream the butter and flour; add the nuts. Press firmly into a 9X11 pan. Bake at 300 degrees farenheit for 15 minutes. Let cool completely. 3. For the first layer:. 4. Mix all ingredients well and spread on the cooled crust. 5. For the second layer:. 6. Prepare pudding according to package directions. Spread in the pan. 7. For the topping:. 8. Spread with cool whip and garnish with chocolate shavings. 9. Chill for 45 minutes and serve. |
