Ingredients:
1 cup fresh blueberries |
1 cup fresh strawberries, sliced |
1 cup fresh red currant |
1 cup fresh blackberries |
1/3 cup sweet dessert wine (such as sauterne) or 1/3 cup apple juice (such as sauterne) |
1 1/2 cups fresh red raspberries |
3 tablespoons maple syrup (or to taste) |
2 cups vanilla wafer cookies, crumbled |
4 sprigs fresh mint leaves |
Directions:
1. In a large bowl, combine blueberries, strawberries, currants, blackberries, and wine or apple juice. Let stand for 20 minutes, stirring occasionally. 2. Meanwhile, puree raspberries and syrup in a blender or food processor until smooth. 3. To assemble dessert, spoon a layer of mixed berries into the bottom of 4 parfait glasses or wine glasses. 4. Top with a drizzle of raspberry puree, then vanilla wafer crumbs. 5. Repeat until all ingredients are used, ending with a drizzle of raspberry puree. Garnish each serving with a sprig of mint. If desired, chill parfaits for 1 hour before serving. 6. Variation: Substitute any other fresh berries for those listed above. Helpful Hint: You may substitute frozen berries for fresh, if desired, but frozen berries will exude more juice than fresh berries. |
