Lavender & White Balsamic Vinaigrette

Adapted from a recipe from The Spice House.
Ingredients:
2/3 cup olive oil
1/3 cup white balsamic vinegar
1 tablespoon finely minced shallot
1 -2 teaspoon sugar
2 teaspoons freshly grated lemon zest
1 teaspoon dried lavender (food grade) or 2 teaspoons fresh lavender (food grade)
1/2 teaspoon salt
1/4 teaspoon mustard powder
1/4 teaspoon ground pepper
1 teaspoon dried thyme leaves
Directions:
1. In a blender, puree the vinegar, shallots and lemon.
2. While still running, add the sugar, lavender, salt, mustard, and pepper. Slowly pour in olive oil.
3. Transfer dressing to a jar and stir in the thyme leaves.
