Lavender & White Balsamic Vinaigrette |

Adapted from a recipe from The Spice House. Ingredients:
2/3 cup olive oil |
1/3 cup white balsamic vinegar |
1 tablespoon finely minced shallot |
1 -2 teaspoon sugar |
2 teaspoons freshly grated lemon zest |
1 teaspoon dried lavender (food grade) or 2 teaspoons fresh lavender (food grade) |
1/2 teaspoon salt |
1/4 teaspoon mustard powder |
1/4 teaspoon ground pepper |
1 teaspoon dried thyme leaves |
Directions:
1. In a blender, puree the vinegar, shallots and lemon. 2. While still running, add the sugar, lavender, salt, mustard, and pepper. Slowly pour in olive oil. 3. Transfer dressing to a jar and stir in the thyme leaves. |
