Lavender Apple Jelly

A great combo of flavors in a pretty jelly.
Ingredients:
6 lbs apples
1 1/2 cups lavender flowers
3 cups sugar
Directions:
1. Quarter apples (don't peel or core).
2. Place in large kettle, add lavender.
3. Bring to a boil and then simmer until apples are tender.
4. Pour into 3 thicknesses of cheesecloth over colander in bowl and allow the juice to drip overnight.
5. Pour 3 cups of juice into large kettle, add sugar.
6. Bring to a rapid boil until a drop on a cold spoon forms a hard film.
7. Pour into sterilized jars and seal.
8. Continue process until all juice is used.
