I was amazed at how incredibly delish these bites are (and so incredibly easy to put together too!) I used Trader Joe's goat's milk creamy cheese (awesome) but you can also just use fresh goat cheese with a little cream to fluff it up. Read more . I think any dark jam would work well (fig, blueberry, black currant, just to name a few). Ingredients:
lavash cracker bread |
fresh basil pesto |
prosciutto (or speck) |
goat's milk creamy cheese |
blackberry jelly |
balsamic vinegar |
organic arugula |
Directions:
1. Preheat the oven to 350°. Cut the cracker bread into rectangles (1 inch X 3 inches). Place the pieces on a sheet pan and bake for 5 minutes, or until crisp. (Watch carefully so as not to burn.) When the crackers are cool they can be placed in an airtight container until ready to use. 2. Mix jelly with balsamic vinegar, enough to give it a sauce consistency. 3. Spread a little pesto on the cracker then top with a roll of prosciutto. (I halved the slice of prosciutto and rolled it.) Add a small dollop of the goat cheese, squirt (or drizzle) some of the blackberry balsamic and top each with an arugula leaf. 4. Hecka easy, right? Place on a platter and serve! |
