Try this recipe for lemon and dill flavored roasted potatoes. Perfect for Mediterranean or Greek menu. Ingredients:
1/4c canola oil |
1/2c butter,melted |
2tbs lemon juice |
3cloves garlic,minced |
1tbs dried dill weed |
1tsp salt |
1tsp pepper |
5 lg. potatoes,peeled and cubed |
Directions:
1. Preheat oven to 400. 2. In a large bowl,stir together the canola oil,melted butter,lemon juice,garlic,dill,salt and pepper. Add potatoes and toss to coat. 3. Spread potatoes out on a baking sheet and drizzle any remaining liquid from thebowl over them. 4. Bake in the preheated oven until potatoes are brown and crispy,about 45 mins. |
