Amazingly good, chewy cookies. You won't miss the flour
Ingredients:
5 cups almond meal
1 cup coconut flakes
1 teaspoon baking soda
2 eggs
1/2 cup melted butter
1/2 cup honey
Directions:
1. Mix all together.
2. Drop by spoonfuls on a cookie sheet & squash with a fork.
3. Bake at 325 for 9 minutes.
4. You can add raisins, craisins, and/or chocolate chips to make them even better.
5. (Laura gave me the recipe - I haven't made it yet, so it might make more or fewer cookies.This is my best estimate based on seeing her batch.).
