I had one at The Diner in Ottawa and wanted to try my own. Really...You can't screw this one up
Ingredients:
2 eggs
1 lg tortilla
2 tbsp salsa
1 cheez slice
lettuce
Directions:
1. Lay tortilla out on a plate and spread salsa in the center
2. Tear cheez slice in half and place on salsa (so when you put the egg on it melts a little)
3. Scramble eggs, then before completely solid reform into a long rectangular shape.
4. Brown on one side, then flip and brown the other to maintain shape
5. Place egg on top of cheese
6. Top with Lettuce
7. Wrap it all up in some sort of burrito, tubular shaped thing
8. Enjoy and watch out for drips!!
9. Can also work with half a brick o fmashed tofu, salt, pepper and cayenne instead of eggs.
