Ingredients:
2 large baking potatoes (about 1 1/2 pounds), peeled and shredded |
2 large eggs |
1 medium-size sweet onion, diced |
1/2 cup all-purpose flour |
1 teaspoon salt |
1/4 teaspoon baking powder |
vegetable oil |
sour cream |
applesauce |
Directions:
1. Combine potatoes and water to cover in a bowl, and let stand 10 minutes. Drain well. 2. Stir together potatoes, eggs, and next 4 ingredients, blending well. 3. Pour oil to a depth of 1/2 inch into a large heavy skillet; heat to 375°. Drop potato mixture by 1/4 cupfuls into hot oil, and fry, in batches, 3 to 4 minutes on each side or until golden. Drain on paper towels. Serve with sour cream and applesauce. |
