Latin Mushrooms In Vinaigrette Dressing

This is a recipe I obtained from an International Dinner party at my friend Jean’s house. This was one of the recipes a guest brought and it was a big hit. This was served as an appetizer but would also be good as a side dish.
Ingredients:
1-1/2 pounds wild mushrooms sliced
1 teaspoon lemon zest finely grated
1/2 teaspoon freshly ground black pepper
2 teaspoons parsley finely chopped
2 teaspoons mint
2 tablespoons red wine vinegar
1/4 cup extra virgin olive oil
1-1/2 teaspoons granulated sugar
1 teaspoon salt
Directions:
1. Place mushrooms in small saucepan and cover tightly.
2. Cook over low heat shaking pan frequently about 4 minutes until softened.
3. Remove to ceramic bowl.
4. Make a dressing out of the remaining ingredients and pour over mushrooms.
5. Marinate at least 2 hours before serving.
