A nice light salad to use up some veggies from the garden. Ingredients:
1/2 c light balsamic vinegar |
1 shallot,peeled and minced |
1 lemon,zested and juiced |
4 radishes,trimmed and thinly sliced |
1/2 large cucumber,thinly sliced |
1/2 small red onion,peeled and thinly sliced |
1 head bibb lettuce,torn |
Directions:
1. In bowl,whisk together balsamic dressing,shallots,1TB lemon juice and 1/4 tsp lemon zest. 2. In large bowl,combine radishes,cucumbers,onion and lettuce. 3. Just before serving,drizzle salad with dressing mixture. |
