This is a spin off of a muffin recipe.I use powdered milk(3/4 powder..1 cup water, add whn milk is called for) i also by fluke used 2 heaping teaspoons of bk. powder and it came out so light and fluffy.
Ingredients:
1 3/4 cups all purpose flour
1/3 cup sugar
2 teaspoons bk. powder
1/4 teaspoon salt
pinch or 2 or 3 of cinnamon
1 egg well beaten
3/4 cup milk(if using powdered do 3/4 cup powder, 1 cup water)
1/4 cup oil(canola)
i bar chocolate(ghirardelli semi sweet or whatever suits your fancy,broken into pieces)
anything else you want to add or take away such as bluberies, strawberries, bannanas..they all go good with chocolate and cinnamon)
Directions:
1. Preheat oven to 400. Grease muffin cups or 8in baking pan.
2. In a medium bowl sift flour,bk. powder, salt, and cinnamon. Set aside
3. In another bowl combine egg, milk, and oil.
4. Add egg mixture all at once to flour mixture stirring just until incorporated.lumps ar good(the more the better)
5. Lightly fold in chocolate pieces and any fruit you may want to add.
6. Pour into prepared pan and bake 18 to 20 minutes.
