Ingredients:
1 (16-ounce) package dried red kidney beans |
10 cups water |
1/2 cup vegetable oil |
1 medium onion, chopped |
1 medium-size green pepper, chopped |
2 stalks celery, chopped |
2 teaspoons salt |
2 teaspoons sugar |
1 teaspoon garlic powder |
3/4 teaspoon red pepper |
1/2 teaspoon dried parsley flakes |
1 cup ground smoked sausage |
hot cooked rice |
Directions:
1. Sort and wash beans. Combine beans and next 10 ingredients in a Dutch oven; bring to a boil. Reduce heat; cook, uncovered, over medium heat 1 1/2 hours or until beans are tender. 2. Stir in sausage; cook 30 minutes. Serve over hot cooked rice. |
