A wonderful soup for a cold day! Adds color and crunchy texture with the corn and Zucchini Ingredients:
1 lb ground sirloin |
1/2 c. chopped onion |
1 pkg. (7-3/4 oz.) lasagna dinner mix |
5 c. water |
1 can (14-1/2 oz.) diced tomatoes, undrained |
1 can (7 oz.) whole kernel corn, undrained |
2 tbs. grated parmesan cheese |
1 sm zucchini, chopped |
chopped fresh 'shooms if you like |
Directions:
1. In a Dutch oven, cook sirloin and onion over medium heat until meat is no longer pink; drain. 2. Add contents of Lasagna Dinner sauce mix, water, tomatoes, corn and Parmesan Cheese; bring to a boil. 3. Reduced heat; cover and simmer for 10 minutes, stirring occasionally. 4. Add the lasagna noodles and zucchini. Cover and simmer for 10 , minutes or until noodles are tender. 5. Serve immediately. 10 servings (2 1/2 quarts) |
