Lasagna stuffed with veggies, cheese and coated with tomatoes. Ingredients:
2 cups ricotta cheese |
2 cups mozzarella cheese |
2 large eggs |
1 fennel bulb |
1 cup carrots |
3 medium zucchini |
2 cups eggplant |
2 medium red onions |
1 medium red pepper |
1/2 cup black olives |
20 ounces pasta |
3 cups tomatoes |
Directions:
1. Cut up and roast veggies at 425 2. Chop in food processor roughly, do not puree 3. Cook sausage 4. Mix cheeses (half the mozzerella) and eggs, add fresh herbs 5. Cook pasta halfway 6. Fill each lasagna with cheese and veggies, roll up and place in pan. 7. Cover with tomatoes and half the mozerella 8. Bake in oven covered for half an hour, uncovered for 15 minutes. |
