Lasagna with lean ground beef and cottage cheese (in place of ricotta)
Ingredients:
1 pound ground beef
1 large onion
8 oz pasta, whole wheat
8 oz tomato sauce
28 oz canned tomatoes
2 cups 1% cottage cheese
10 oz spinach
6 oz mozzarella
1 tbsp olive oil
Directions:
1. Follow directions from Betty Crocker's New Cookbook for Italian Sausage Lasagna. Substitue lean ground beef for sausage, and cottage cheese for ricotta. Omit parmesan and cut mozzarella to 6 oz.
