Large Quantity Restaurant Biscuits

Great for community supers. Recipe easily varied.
Ingredients:
5 lb self rising flour
20 oz shortening ( crisco )
1/2 gallon buttermilk
extra flour as needed
melted butter to brush over biscuits
Directions:
1. Cut shortening into the flour by hand.
2. Slowly stir in the buttermilk, mixing with wooden spoon.
3. Add more self rising flour on floured board kneading by hand
4. till pliable.
5. Roll or pat out thickly onto a greased sheet pan or pans
6. ( Rectangular ) scoring biscuits into squares )
7. Bake 375 to 400 F till golden and done
8. Or in a convection oven until browned.
9. Brush tops with melted butter
10. Serve at once, cut through scores.
