CAJUN SHRIMP SALAD This recipe came from an estate sale. I obtained it when I purchased the family collection from the Robinson Estate in Wylie, Texas in 1986. Ingredients:
2 pounds macaroni cooked |
4 pounds shrimp boiled and peeled |
24 eggs hardboiled and chopped |
2 cups onion finely chopped |
1 cup celery finely chopped |
2 cups black olives finely chopped |
2 cups dill pickles chopped |
dressing |
1 quart mayonnaise |
1/2 cup olive oil |
2 tablespoons hot pepper sauce |
2 tablespoons fresh lemon juice |
1 tablespoon worcestershire sauce |
1 tablespoon mustard |
2 tablespoons ketchup |
Directions:
1. Cook macaroni then drain and cool. 2. In large bowl mix macaroni, shrimp, eggs, onions, celery, olives and pickles then toss well. 3. Combine all dressing ingredients the pour over salad and mix well. 4. Refrigerate 1 hour before serving. |
