A combination of several Larb Neua recipes researched on the web.
Ingredients:
1 napa cabbage, washed and shredded
2 inches of peeled fresh ginger chopped
3 large garlic cloves chopped
15 mint leaves, shredded
6 green onions green only slivered
1/4 red onion sliced in thin strips
1 fresh red bell pepper cut in strips
1 lb. lean ground beef, cooked, crumbled
2 tbsp of white rice, dry toasted in a pan, ground in a mortar and pestle
dressing
3 tbsp of lime juice
2 tbsp of lemon grass paste (buy it!! in produce)
2 tbsp of fish sauce
1/2 tbsp of tamarind paste
2 packets of splenda or 2 tbsp of brown sugar
1 tbsp of crushed dried red thai chili pepper
1 tbsp of water to thin out dressing
Directions:
1. Cook beef, reserve.
2. Chop veggies.
3. Mix dressing.
4. Combine and chill.
5. Awesome and keeps getting better and better as it sits.
