While traveling in the south I saw many glass canned goods for peaches, apple butter etc to be used for desserts. The following recipe is for Lane's products a friend used to make this great cobbler. In the summer, I would use fresh peaches to do this dessert Ingredients:
peach filling |
1 quart of fresh sliced peaches |
3/4 cup water |
1 1/2 tsp fresh lemon juice |
1 cup sugar |
2 tbs butter or margarine |
cornstarch to thicken as needed |
topping |
2 1/4 cups flour |
3 tsp baking powder |
1 1/2 tsp vanilla or almond |
1/2 stick buttter or margaine melted |
1 1/2 cup sugar |
1/2 tsp salt |
1 1/2 cups milk |
Directions:
1. For fruit filling, combine all in sauce pan and stir well. 2. Then cook until it comes to a boil and thickened over medium heat 3. Place filling in 8 x 11 or similar pan 4. Mix topping ingrdients together and pour over filling. 5. Sprinkle with some sugar and cinnamon 6. Bake in a 300F oven about 45 minutes or browned |
