Land O Lakes Lemon Velvet Butter Sauce |

Delicious smooth sauce for vegetables or fish.. Ingredients:
1/3 cup dry white wine |
2 tablespoons finely chopped shallots |
4 teaspoons fresh lemon juice |
1 tablespoon flour |
1 cup whipping cream |
1/2 cup creamed butter, cut in 8 pieces |
salt |
fresh ground pepper |
Directions:
1. Combine wine, shallots and lemon juice in a 10 inch non reactive skillet. 2. Cook over medium high heat until mixture comes to a boil, about 5-7 minutes. 3. Continue boiling until liquid almost evaporates about 4-5 minutes. 4. Reduce heat to medium low. 5. Add flour, mix well. 6. Slowly stir in cream with wire whisk until well mixed. 7. Cook, stirring constantly, until mixture boils, about 1 to 2 minutes. 8. Stir in butter until melted. 9. Season with salt and pepper. 10. If sauce starts to curdle, decrease heat, whisk until smooth. |
