A Hotpot is a casserole without a lid. It began in Lancashire when families without an oven took a large oven-proof pot to their baker to have him cook it for them. Ingredients:
3 lbs rump roast, sliced thinly |
3 potatoes, sliced |
3 onions, sliced |
4 large carrots, sliced |
2 cups beef stock |
salt |
pepper |
Directions:
1. Layer a 3 quart casserole dish:. 2. sliced potatoes, then onions, then carrots, then beef, add salt and pepper. 3. Repeat layers. 4. Pour stock over the layers just until covered. 5. Put in 300F oven for 2 hours. 6. Serve as is with crusty bread. |
