Hawaiian style macaroni salad. We lived on Oahu for 3 years and macaroni salad is a staple of life there. This is my version of the island favorite. Ingredients:
1 lb elbow macaroni |
3 hard-boiled eggs, chopped |
4 stalks celery, diced |
2 carrots, grated |
1/2 medium onion, finely chopped |
1 1/2 cups frozen peas |
2 1/2 tablespoons mustard (regular yellow) |
1 1/2 cups mayonnaise |
1/2 tablespoon salt |
1/2 teaspoon pepper |
Directions:
1. Cook elbow macaroni according to package directions, rinse in a colander and let cool. Mix all ingredients together and let chill for a few hours. |
