I received this recipe from my pastor's wife. It is too sophisticated for my kids, but if you like spicy food, I think you will enjoy this. I have only made it with mahimahi, but it should work with any firm white fish. Ingredients:
2 lbs mahi mahi fillets, skinned &, cut into 2-inch by 1-inch pieces |
4 garlic cloves, minced |
2 limes, juice of |
1 1/2 teaspoons cumin |
1 teaspoon fresh ground pepper |
1/2 teaspoon salt |
3 tablespoons canola oil |
lime slice (to garnish) |
Directions:
1. In a small bowl, mix garlic, lime juice, cumin, and pepper into a paste. 2. Spread mixture onto fish& let sit for 20 minutes. 3. Heat oil in a large skillet and saute fish over moderate heat for 8 minutes, turning it over halfway through the cooking time. 4. Drain onto paper towels. 5. Serve garnished with lime slices. |
