This is the cheats way of making Lamingtons. It doesn't look as good but it tastes just as good and it is much easier. Ingredients:
125g butter, softened |
3/4 cup sugar |
1 teaspoon vanilla |
2 eggs |
1 1/4 cups plain flour |
1 1/4 tsp baking powder |
1/2 cup milk |
1 cup desiccated coconut |
chocolate icing |
3/4 cup icing sugar |
2 tbs cocoa powder |
1/3 cup boiling water |
20g melted butter |
Directions:
1. Preheat oven to 160C. 2. Chocolate icing: Place the icing sugar, cocoa, water and butter into a bowl and whisk to combine. Set aside. 3. Place the butter, sugar and vanilla into a bowl and mix with an electric mixer until light and creamy. 4. Gradually add the eggs and beat well. 5. Sift the flour and baking powder together over the butter mixture and mix until well combined. Stir in the milk. 6. Spoon the mixture into a lightly greased slice tin and bake for 20 minutes or until cooked when tested with a skewer. 7. While still warm, cut the slice into squares and carefully pour the chocolate icing evenly over it. Top with coconut. |
