Lamb with Marmalade Sauce |

A nice variation to lamb. You can use regular marmalade but it sweetens the taste. Ingredients:
2 lbs boneless lamb, cut into 3/4 cubes |
2 onions, chopped |
1 clove garlic, minced |
3 tablespoons butter |
2 cups bitter orange marmalade (available in specialty shops) |
3 tablespoons malt vinegar |
2 tablespoons fresh mint, chopped (or 2 tsp dried) |
1/2 teaspoon salt |
1/4 teaspoon cayenne pepper |

Directions:
1. Melt the butter, over moderate heat, in a large saucepan, add the onions& garlic. 2. Cook until just beginning to brown-5 minutes. 3. Add the lamb and cook until browned lightly 8-10 minutes. 4. Add the marmalade, vinegar, mint, salt& cayenne. 5. Cook, stirring once in a while, covered for about 20 minutes. 6. Season to taste. |
