Lamb Verde Stew

This is an easy stew that is great of a cool fall day. I like corn bread/muffins with cheese and jalapenos as a side dish.
Ingredients:
1 lb lamb cit into small bite sized pieces
2 - 15 oz cans whole tomatoes and juice
1 medium onion chopped
5 cloves garlic sliced thin
1 lb potatoes skin on, washed and cubed
1 lb zucchini sliced into rounds
3 -4 oz cans diced green chiles
1 c corn kernels (fresh or frozen work)
1 teas ground cumin
1 teas oregano
1c + 1 c chicken stock or wtaer
salt and pepperto taste
1 t olive oil
Directions:
1. into a pot heat the olive oil
2. Add the lamb and brown (salt and pepper)
3. When the lamb has brown add the onion and garlic and saute until the onion is translucent
4. Crush the tomatoes as you add them, add the juice
5. Add all the rest of the ingredients except one of the cups of chicken stock.
6. Simmered covered for at lest 30 minute, adding the reserved stock if the stew gets to thick.
7. Serve with corn bread or corn muffins.
