This stew is so delicious and so easy to make. I like to serve it with mashed potatoes since it makes it own gravy. Ingredients:
2 lbs lamb, cut into cubes |
1 1/2 lbs raw mushrooms (porcini or shiitake, or any you have on hand) |
extra virgin olive oil |
kosher salt |
2 teaspoons red pepper flakes |
Directions:
1. Drizzle oil liberally over lamb and whole mushrooms in casserole dish. 2. Sprinkle salt and red pepper flakes. 3. Bake covered at 325 for 1 1/2 hours. |
