I'm not sure where I found this recipe but I'm glad I did as it's yummy and it can easily be adapted to cook in the oven or crockpot. Ingredients:
1 tablespoon butter |
1 tablespoon oil |
2 teaspoons madras curry powder |
4 lamb shanks |
1 onion, finely chopped |
2 cups chicken stock |
3 carrots, cut into chunks |
2 potatoes, cut into quarters |
1 tablespoon fruit chutney |
2 cups green peas, cooked |
parsley, chopped, to garnish |
Directions:
1. Heat butter, oil & curry powder in a heavy pan & slowly brown lamb shanks on all sides. 2. Add onion, stock, carrots & potatoes. 3. Bring to the boil, then cover & simmer for 1 hour or until shanks are tender. 4. Stir in fruit chutney & peas and heat through, add salt & pepper to taste and sprinkle with parsley to serve. |
