A simple Lamb stew though takes a while to cook. Good and cheap though massive amounts of flavour. Ingredients:
2 lamb shanks (medium) |
1 onion |
1 bay leaf |
1 stick of cinnamon |
1/2 teaspoon of tumeric |
1/2 teaspoon of ground coriander seed |
1/2 teaspoon of ground black pepper |
2 cloves garlic, finely diced |
2 1/2 litres vegetable or chicken stock |
275 grams, brown lentils |
1 bunch coriander |
Directions:
1. 1. Place Shanks, Cinnamon, Tuneric, Coriander Seed, Black Pepper, Garlic and Stock in a thick based pot good for stewing. 2. 2. Bring to the boil and simmer for 1 hour. 3. 3. Add Brown lentils, and tomatoe if you feel like it, and simmer for 1 hour. 4. 4. Remove Shank and remove meat from the bone. Whilst doing this reduce the sauce and replace the meat once decently reduced. 5. 5. Add chopped Coriander and Sambal Olek or Chilli and serve. |
