Lamb Sandwiches with Green Pea Spread and Herbed Mayo

Fresh peas are abundant this time of year; use them in place of the frozen peas called for in the Green Pea Spread. For a quick dinner, stir leftover Green Pea Spread into cooked pasta, and top with Parmesan.
Ingredients:
1/4 cup fat-free mayonnaise
2 tablespoons chopped fresh basil
2 tablespoons chopped fresh chives
1 (8-ounce) french bread baguette, cut in half lengthwise
1/4 cup green pea spread
2 cups sliced simple roasted leg of lamb (about 9 ounces)
1/2 cup thinly sliced radishes
Directions:
1. Combine mayonnaise, basil, and chives, stirring with a whisk; spread mayonnaise mixture over top half of baguette. Spread 1/4 cup Green Pea Spread over bottom half of baguette, and top with Simple Roasted Leg of Lamb, radishes, and top half of baguette. Cut crosswise into 4 pieces. Wrap sandwiches in foil or parchment paper; chill.
