Although this uses uncooked lamb - with directions for roasting- I don't see why you couldn't use leftover lamb. Recipe Source: Women's Health Ingredients:
3/4 teaspoon pepper |
1/4 teaspoon cayenne pepper |
1/4 teaspoon garlic powder |
1 lb boneless lamb |
1/2 teaspoon olive oil |
8 slices bread |
4 teaspoons garlic spread |
1 cup red onion, slivers |
2 tomatoes, sliced thin |
2 cups spinach |
Directions:
1. Preheat oven to 400 degrees F. 2. Remove all visible fat from lamb. 3. Combine seasoning (black pepper - salt) in a small cup or bowl. 4. Rub lamb with oil then rub with the seasoning mixture. 5. Place lamb in a baking dish and roast for 30-40 minutes or until done (med rare). 6. Let lamb stand for 10 minutes before slicing. 7. Make 4 sandwiches with thinly sliced lamb and the remaining ingredients (bread - spinach). |
