This is one of my favorite stews as it always seems to impress everyone with it's interesting blend of flavors. It takes some time and patience to prepare, but the results are usually worth the effort. Even my friends that don't like lamb, love this one. Ingredients:
colombo powder |
1/4 cup white rice |
1/4 cup cumin seeds |
1/4 cup coriander seeds |
1 tablespoon mustard seeds |
1 tablespoon peppercorns |
1 tablespoon fenugreek seeds |
1 teaspoon whole cloves |
1/4 cup turmeric (ground) |
stew |
1 tbsp oil |
1&1/2 lbs lamb, cut into 1 cubes |
1 med onion, chopped |
2 bunches chives, chopped |
6 cloves garlic, finely chopped |
2 tablespoon fine chopped fresh ginger |
3 tablespoon colombo powder (from recipe above) |
5-6 cups chicken stock |
2 tablespoon tomato paste |
2 teaspoon chopped fresh thyme (1/2 tsp dried) |
1 lb potatoes chopped to 1 cubes |
1 lb butternut squash chopped to 1 cubes |
1 tablespoon lime juice |
1/4 cup chopped cilantro |
Directions:
1. Columbo Powder: 2. Brown the rice for 3 min over med head in a skillet. Transfer to a cool bowl. 3. Add remaining spices to skillet and brown for 3 minutes until fragrant. Transfer to bowl with rice. 4. Combine rice and spices in blender or spice grinder and grind down to a fine powder. 5. Makes enough for 6-8 lbs of meat, poultry or seafood. 6. ..................................... 7. The Stew: 8. Season lamb with salt & pepper and brown in oil in a dutch oven. (I also marinate and brown it with a little bit of onion cooking wine). 9. Remove lamb after browning, add a bit more oil to pan and add onions, chives, garlic and ginger. 10. Cook aprox. 3 minutes till veggies are soft, but not brown. 11. Stir in Colombo Powder and cook for 1 more minute. 12. Return lamb to pan with veggies. 13. Add stock, tomato paste and thyme. 14. Bring to a boil then reduce heat to simmer uncovered for 1 hour. 15. Add potatoes and squash and cook for 30 more minutes (till tender). 16. Just prior to serving, add lime juice and sprinkle with cilantro. 17. Serve and enjoy. 18. Also: try not to spill the stew on any clothing - the tumeric leaves stubborn stains! |
