Always on the lookout for something outside my comfort zone. This is surprisingly quick and easy to prepare. Serve with a nice rice pilaf and a vegetable. Ingredients:
8 ounces plain yogurt |
1/4 teaspoon ground cinnamon |
1/4 teaspoon ground allspice |
1/4 teaspoon salt |
1/4 teaspoon cayenne pepper |
2 garlic cloves, minced |
2 tablespoons fresh mint, chopped |
1 teaspoon lemon zest, grated |
1 teaspoon honey |
40 ounces lamb loin chops, 1 1/4-inch thick |
Directions:
1. In a medium bowl, mix together the yogurt, cinnamon, allspice, salt and cayenne. Add garlic, mint, lemon juice and honey. Mix well. Cover and refrigerate at least 2 hours. 2. Preheat broiler. Season lamb chops with salt and pepper. Broil about 4 inches from heat for 5 minutes on each side for medium. Pour yogurt sauce over chops and serve. |
