This lamb chop recipe with flavorful mint sauce comes together in just minutes. Serve with rice and a green salad for a quick dinner tonight. Ingredients:
1/4 cup fat-free sour cream |
1/8 teaspoon salt |
1/2 teaspoon dried mint leaves |
4 (4-ounce) lean lamb loin chops (1 inch thick) |
1/4 teaspoon salt |
1/4 teaspoon roasted garlic-pepper seasoning or 1/8 teaspoon black pepper and 1/8 teaspoon garlic powder |

Directions:
1. Combine first 3 ingredients; stir well, and set aside. 2. Trim fat from chops; sprinkle chops with 1/4 teaspoon salt and garlic pepper. 3. Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot. Add chops. Cook 3 to 4 minutes on each side or until browned. Reduce heat to medium-low; cook 2 to 3 additional minutes on each side or to desired degree of doneness. Serve with sour cream sauce. |
