Ingredients:
4 lean lamb loin chops (each chop should weigh about 4 ounces)
1/2 cup water
1/2 cup marsala
2 tablespoons tomato paste
1 cup sliced fresh mushrooms
1/4 cup chopped onion
Directions:
1. Trim all visible fat from the lamb chops.
2. Coat a large skillet with nonstick cooking spray.
3. Place skillet over medium heat until hot.
4. Add chops to the skillet; cook 7 minutes on each side or to desired degree of doneness.
5. Remove chops from skillet; drain and set aside; keep warm.
6. Wipe drippings from the skillet using a paper towel.
7. In a bowl, mix together the water, wine, and tomato paste using a whisk.
8. Add wine mixture, mushrooms, and onions to the skillet; cook over high heat, stirring constantly for 2 minutes or until thickened.
9. Spoon sauce over chops.
