1 lb ground lamb |
1/4 cup onion |
1/4 cup sweet pepper |
1 tablespoon oregano |
1 teaspoon salt |
1/4 teaspoon pepper |
2 cups zucchini |
1 cup corn |
3 cups tomatoes |
1/4 cup parmesan cheese |
Directions:
1. brown meat with chopped onions and chopped bell peppers 2. add spices 3. place chunked zucccini and corn in bottom of greased 2 1/2 quart casserole (I think you could use frozen corn here ). 4. add browned lamb mixture 5. top with chunked tomatoes and juice. 6. cover. 7. bake at 350 degrees for 1 1/2 hours 8. stirring occasionally. 9. top with cheese last 5 minutes at serving time 10. you can cut baking time by precooking zuccini and corn before adding to casserole 11. bake at 375 for 30 minutes.if you do this. |
