From Caprial's Cafe Favorites by Caprial Pence Ingredients:
2 lbs ground lamb |
1 tablespoon olive oil |
1 small onion, minced |
3 garlic cloves, chopped |
1/4 cup breadcrumbs |
1/2 teaspoon chopped fresh rosemary or 1/4 teaspoon dried rosemary |
2 tablespoons cayenne or 2 tablespoons chili sauce |
salt & freshly ground black pepper, to taste |
4 good quality hamburger buns |
Directions:
1. Place the ground lamb in a large bowl. 2. In a small saute pan over high temperature, heat about 1 teaspoon of the olive oil until very hot. Add the onion and garlic and saute until they begin to give off their aroma, 2 or 3 minutes. Set aside to cool. 3. Add the cooled onion mixture, bread crumbs, rosemary, cayenne sauce, and salt and pepper to the ground lamb and mix thoroughly. Form into 4 burgers. 4. In a medium saute pan over high temperature, heat the remaining olive oil until smoking hot. After 1 minute, turn the heat to medium. Cook the burgers about 3 minutes on each side for medium, or as long as you prefer. 5. Top with a mild fresh goat cheese or your favorite cheese. Serve the Lamb Burgers on good-quality buns accompanied by your choice of condiments. |
