I found this recipe on the internet on a Greek cooking site and thought that it sounded good. You either use a leg of lamb or use lamb shanks. Ingredients:
1 leg of lamb or 1 lamb shank |
2 ounces feta (or more) or 2 ounces kasseri cheese (or more) |
1 teaspoon thyme |
1 teaspoon spearmint, flakes |
1 teaspoon oregano |
2 garlic cloves |
2 lemons, juice only |
1 tablespoon salt |
pepper |
Directions:
1. Wipe meat with damp cloth. 2. Make incisions with small sharp knife on all sides of leg or shanks. 3. Insert pieces of garlic clove and cheese. 4. Rub with lemon juice. 5. Sprinkle with herbs, salt and pepper. 6. Wrap securely in heavy paper twice. 7. Use greaseproof paper such as cooking parchment or oil brown paper. (Do not use aluminum foil. It prevents browning.) 8. Tie with string. 9. Bake a leg for 2 1/2 hours in 350F oven. Bake 2 hours if using shanks. |
