This is a great side dish for when you are grilling, or camping (in a cabin that is). A friend of mine came up with the inital idea for the dish one night, but I have added to it as time passed. It is a favorite recipe among family and friends.
Ingredients:
7 large potatoes, chopped (do not peel)
1 green bell pepper, diced
1 medium red onion, diced
4 ears corn
1/2 cup olive oil
0.25 (6 ounce) jar steak seasoning (i use a local seasoning called regas, but i am sure any steak seasoning would work)
2 tablespoons ground pepper
0.5 (12 ounce) can beer (i prefer miller high life for this recipe)
2 cups cheddar cheese (shredded)
sour cream
Directions:
1. Heat oven to 500 degrees.
2. Cut corn kernels off of the cobs and put in a lage mixing bowl. Add the potatoes, onion, and belle pepper and mix until blended. Stir in the oil until everything is well coated and then add the pepper and steak seasoning.
3. Pour into a greased 9x13 glass pan. Pour the beer over the top and cover with foil. Bake for about 30 minutes or until juices are bubbling. Remove foil and bake for another 30 minutes.
4. Remove pan from oven and stir in cheese until melted then serve. Top with sour cream if you like.
