These little finger sandwiches are good for any ladies luncheon or afternoon tea time with friends.... Compliments of L & T magazine Ingredients:
1/4 cup all purpose flour |
1/4 cup sugar |
1/4 cup sugar substitute (like splenda) |
1/4 teaspoon salt |
2 3/4 cups milk, divided |
3 eggs |
3/4 teaspoon vanilla extract |
2 packages ladyfingers, split (3 ounces each) |
2 teaspoons coarse sugar |
Directions:
1. In a small saucepan, combine flour, sugar, sugar subsitiute, salt and 2 1/2 cups milk until smooth. 2. Cook and stir over medium high heat until thickened and bubbly. 3. Reduce heat; cook and stir 2 minutes longer; remove from heat. 4. In a small bowl, whisk 2 eggs. 5. Stir in a small amount of hot filling into eggs; return all to pan, stirring constantly. 6. Bring to a gentle boil; cook and stir 2 minutes longer. 7. Remove from the heat; gently stir in vanilla. 8. Transfer to a bowl; cover with plastic wrap and refrigerate until chilled. 9. Place tops of ladyfingers on an ungreased baking sheet. 10. In a small bowl wisk remaining egg and milk; lightly brush over ladyfingers. 11. Sprinkle with coarse sugar. 12. Broil 4 inches from the heat for 1 to 2 minutes or until golden brown. 13. Spread custard over the bottoms of ladyfingers; replace tops. 14. Serve immediately. 15. Makes 24 sandwiches. |
